Hi,

Sounds pretty nasty. Windows 10 in particular seems like a privacy and security nightmare. (I use Linux myself but know that a lot of people need to stick with Windows.)
Probably if you want to guarantee that ALL internet traffic goes through your VPN, install a router with OpenVPN capability between your LAN and your internet gateway, configured to force all non-local traffic through the router's VPN tunnel. Then no matter what Windows tries to do the only path to the internet will be through the VPN. This would also have the advantage of VPN protection for every device on your network.
