Now it seems that many people don’t know what Eyefinity is which is a shame as it is an excellent piece of technology and shows a lot of innovation on AMD/ATI’s part. Basically, it allows you to use multiple screens as a single display in games! This is different than your regular multi-monitor setup where games will not span both screens.
And as they say, a picture is worth a thousand words:

What do you need to use Eyefinity? 3 monitors with the same resolution (preferably one with a DisplayPort or otherwise you can get a DVI-DisplayPort adapter) and a reasonably powerful modern ATI card that supports EyeFinity. This also works with 2 monitors but may be annoying for FPS games where the bezel is blocking your centre view. Most recent games support EyeFinity too including Empire Total War, Call of Duty 4, World of Warcraft among many popular games.
With certain versions of ATI cards, they have cards that can support up to 6 monitors!
